Rice Pudding
Rice Pudding is an moderately easy dinner. Made with 2/3 c. uncooked enriched long grain white rice (not instant or converted), 3 c. boiling water, 1/2 tsp. salt, 14 oz. can eagle brand sweetened condensed milk and 1/2 c. raisins, this recipe delivers authentic, satisfying flavors. In top of double boiler, combine rice, boiling water and salt. Cook, covered, over medium heat, about 40 minutes or until rice is tender.
Water in bottom of double boiler should be boiling. More boiling water may have to be added.
Do not drain.
Stir in condensed milk and butter.
Cook, uncovered, stirring frequently, until slightly thickened, about 20 minutes.
Remove from heat; add raisins and vanilla.
Serve warm or cold.
