Red Rice
Red Rice is an moderately easy dinner. Made with 2 large onions, chopped (1 c.), 1 clove garlic, minced, 2 tbsp. margarine, 2 tbsp. olive oil and 1 1/4 c. uncooked rice, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Saute onion and garlic in butter or margarine and olive oil until soft in medium saucepan.
Stir in rice, tomatoes, chicken broth, salt and pepper; heat to boiling, cover, turn down to low. Cook slowly 15 minutes or until rice is tender and liquid is absorbed.
Fluff up rice with fork, spoon into a serving bowl.
