Red Beans and Rice
Red Beans And Rice is an impressive dinner. Made with 1 lb. red beans, soaked overnight, 1 medium yellow onion, chopped, 1 bunch green ononns, chopped, 7 cloves garlic, chopped fine and 1/2 c. chopped parsley, this recipe delivers authentic, satisfying flavors. Drain beans.
Put them in a 6-quart heavy pot and add 3 quarts water.
Cover and simmer for 1 hour or until beans are tender. Watch that water does not boil down too far.
The beans must have water on them at all times.
Add the rest of the ingredients, except the cooked rice, to the pot and more water to cover, if needed.
Simmer partially covered, for 1 to 1 1/2 hours or until liquid has thickened.
Serve over cooked rice.
