Combine eggplant, onion and garlic in a 3-quart casserole. Drizzle with olive oil.
Cover and microwave on High for 5 minutes. Stir in zucchini, bell pepper and basil.
Re-cover and microwave on High for 5 minutes.
Stir in tomatoes, re-cover and microwave on High for 5 minutes or until vegetables are tender.
Stir in cheese, black pepper and salt; serve immediately.
