Raita Salad(India) is an easy dinner. Made with 2 large cucumbers, 1 pt. plain low-fat yogurt, 2 tbsp. chopped fresh mint, dash of ground white pepper and 6 large, ripe tomatoes, thickly sliced (for serving), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Peel, halve and seed the cucumbers; grate, using a food processor or hand grater.
Place in a medium bowl.
Add yogurt, mint and white pepper and stir to combine.
Cover the yogurt mixture and refrigerate it until needed.
To serve, arrange each sliced tomato on individual plates; top with the cucumber mixture. Serves 6.
