Quick Hearty Bean Soup
Quick Hearty Bean Soup is an moderately easy dinner. Made with 2 cans bush's great northern (white) beans (undrained), 1 can swanson's clear chicken broth (discard little blob of fat), 2 broth cans cold water, 2 ribs celery, thin sliced crosswise and 1 large carrot, grated, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Put all ingredients into a large soup pot, bring to a boil on high, then reduce heat to a gentle simmer until onion, potato, celery and turnip are done, roughly 35 to 40 minutes.
We do not add salt since other ingredients do very nicely for seasoning. This makes six generous helpings and with the addition of a hot bread and a light dessert makes a meal.
