Purée Of Sweet Potatoes is an easy dinner. Made with 1 1/2 lb. sweet potatoes, 1/4 c. cream, 6 tbsp. softened butter, 1 tbsp. light rum and 2 tsp. grated fresh ginger, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
👨🍳 Instructions
Bake potatoes (in skins after washing) at 400° for 50 minutes, or until tender.
Peel and mash with butter and rum.
Stir in ginger.
Turn into saucepan over medium-low heat, stirring frequently to let most of the moisture evaporate from potatoes. Stir in cream.
Add salt and pepper to taste.
