Pumpkin Soup
Pumpkin Soup is an moderately easy dinner. Made with 4 tbsp. butter, 1/2 c. chopped onion, 1 clove garlic, chopped, 2 c. pumpkin purée and 4 c. chicken stock, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Melt butter in saucepan over medium heat.
Add onion and garlic.
Saute until soft and translucent (8 minutes).
Add pumpkin and stock.
Stir well to mix.
Add bay leaf, sugar, curry and nutmeg.
Bring to boil, lower to simmer and cook for 30 minutes. Add salt and pepper to taste.
Remove from heat.
Add cream. Return to heat.
Bring soup to hot, but do not simmer.
Serve hot.
