Pumpkin Pies
Pumpkin Pies is an moderately easy dinner. Made with 1 pt. pumpkin, mashed, 3 c. brown sugar, packed, 3 heaping tbsp. flour, 1 1/2 qt. boiled milk and 3 eggs, separated, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Mix pumpkin, sugar, flour, yolks, spices and vanilla.
Add boiling milk to this and beat with a beater until thoroughly mixed.
Add beaten egg whites and continue to beat until fluffy. Some may like a solid pie; this may just take a heated but not boiled milk and less beating.
Pour into unbaked pie crusts.
Bake in hot oven 15 minutes, then medium oven 45 minutes until done. Makes 3 pies.
