Potato Soup For A Crowd is an moderately easy dinner. Made with 8 qt. raw potatoes, peeled and diced, 10 c. sliced celery, 10 c. onions, chopped, 10 tbsp. parsley, chopped and 5 c. water, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Combine potatoes, celery, onions, parsley and water.
Simmer 30 minutes.
In another saucepan, melt butter and stir in a little flour.
Add in a small amount of liquid from potato mixture to form a paste.
Cool and stir in half and half and seasonings. When vegetables are cooked, mash and add milk mixture.
Stir constantly; do not boil.
