Potato Soup
Potato Soup is an moderately easy dinner. Made with 3 tbsp. butter or oleo, 1 large onion, 6 large potatoes, 1 c. celery, chopped and 3 tbsp. parsley, chopped, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Saute chopped onion in butter or oleo until tender.
Do not brown.
Add pared and cubed potatoes, celery, parsley, salt, pepper and water to cover vegetables by about 1 inch.
Cook until tender. Mash about half of potato mix, then add the milk and reheat thoroughly.
Do not boil.
Great served with buttered toast.
