Potato Soup
Potato Soup is an moderately easy dinner. Made with 6 to 7 potatoes, 1/2 tsp. tarragon, 1 tsp. parsley (dried), salt and pepper and mozzarella cheese, cut into small cubes, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Peel potatoes and cut into pieces.
Dice onion.
Put potatoes and onion into a large pan; just barely cover with water and simmer until very soft.
Drain and mash by hand.
There should still be small lumps.
Put back into pan and cover with milk until very fluid and soup consistency.
Add herbs, salt and pepper to taste.
Heat over very low heat, just until slightly bubbling. Pour over cheese cubes in bowl and serve with crackers.
