Potato Scallop
Potato Scallop is an moderately easy dinner. Made with 3/4 c. chopped onion, 1 1/2 tbsp. margarine, 1 1/2 tbsp. flour, 3/4 tsp. salt and pepper and dash of paprika, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Saute onion in butter 5 minutes.
Stir in flour and seasoning. Cook over low heat until smooth.
Remove from heat.
Gradually stir in milk.
Heat, stirring constantly until sauce is thickened. Add cheese.
Mix well.
Layer 1/2 of potatoes in greased casserole.
Cover with 1/2 of cheese sauce.
Repeat potato and cheese sauce.
Bake 1 hour, covered, then uncover and bake an additional 15 to 30 minutes until golden brown on 350Β°.
