Potato Leek Soup
Potato Leek Soup is an moderately easy dinner. Made with 1/2 c. coarsely chopped onions (about 1/2 lb.), 4 c. sliced leek (white part only, about 2/3 lb.), 2 medium potatoes, peeled and diced, 3 tbsp. butter, margarine or oil and 4 c. chicken stock (about 2 cans clear chicken broth), this recipe delivers authentic, satisfying flavors. Saute onions, leek and potatoes in butter over medium heat for 8 to 10 minutes.
Add stock and bring to a boil.
Simmer 20 minutes.
PurΓ©e potato-leek mixture in blender.
Adjust seasoning with salt and pepper.
Add half and half.
Return to heat and heat through.
Makes 6 servings.
