Potato Cheese Soup
Potato Cheese Soup is an moderately easy dinner. Made with 5 lb. potatoes, peeled and sliced, 2 medium onions, chopped, garlic powder, parsley flakes and salt and pepper, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Wash and peel potatoes and onions.
Dice the potatoes and onions and place in a large saucepan of water.
Add garlic powder, parsley, salt and pepper to the saucepan.
Cook until tender.
Do not drain water.
Use the blender to blend about 2 cups of the soup and return to the saucepan.
(This is done to thicken the soup.)
Add cheese and continue to cook over low heat until the cheese is melted.
Add wine or sherry just before serving. Garnish soup with bacon bits, green onions and extra grated cheese, if desired.
