Potage Megali(French Mediterranean Leek Soup) is an moderately easy dinner. Made with 4 c. sliced leeks, 1 c. sliced onions, 4 to 6 cloves garlic or according to taste, 4 c. peeled, chopped tomatoes, drain liquid and keep separately and 1 qt. chicken broth, this recipe delivers authentic, satisfying flavors. Saute the leeks and the onions in oil and butter (or margarine) until soft.
Add the tomatoes.
Cook for 5 minutes.
Add the tomato paste and the previously drained juice together with the chicken broth.
