Pork Tenderloin Medallions
Pork Tenderloin Medallions is an moderately easy dinner. Made with 2 lb. tenderloins, 1/4 c. flour, 1 1/2 tbsp. lemon pepper, 3 tbsp. margarine and 1 large can peeled tomatoes, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Mix flour and lemon pepper.
Roll pork in this and brown in butter.
Remove to a platter.
Combine remaining ingredients in skillet.
Bring to a boil to melt sugar and break up tomatoes. Return pork to skillet, lower heat and cover and simmer 30 to 45 minutes.
Remove pork to platter.
Cool 15 minutes.
Slice 3/8-inch thick pieces.
Continue cooking sauce until thickened.
Serve with yellow rice.
