Porcupine Meatballs
Porcupine Meatballs is an moderately easy dinner. Made with 1 can tomato soup, 1 lb. ground beef, 1/4 c. minced onion, 1 tsp. salt and 1/4 c. uncooked rice, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Mix 1/2 cup tomato soup with ground beef, minced onion, salt, rice, egg and parsley.
Shape into balls about 1 1/2 inches in diameter (about 16 balls).
Brown in shortening (with minced garlic clove) in a large skillet.
Blend in rest of the can of soup and water; cover.
Simmer about 40 minutes or until rice is tender, stirring now and then.
Serves 4.
