Remove tops and seeds from peppers.

Set aside.

Combine rice, ham, chopped onion, coriander, ginger, salt and pepper.

Stuff cleaned peppers with rice mixture.

Place upright in a shallow pan.

Heat until boiling.

Add in cornstarch mixture.

Stir until thick.

Put the sauce in the pan with the stuffed peppers.
