Polynesian Stuffed Peppers
Polynesian Stuffed Peppers is an impressive dinner. Made with 6 large red peppers, 2 c. cooked rice, 1/2 lb. ham, ground fine, 1 medium onion, chopped and 1/4 tsp. ground coriander, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Remove tops and seeds from peppers.
Set aside.
Combine rice, ham, chopped onion, coriander, ginger, salt and pepper.
Stuff cleaned peppers with rice mixture.
Place upright in a shallow pan.
Set aside.
Combine undrained pineapple, onion, green pepper and tomatoes in a pot.
Heat until boiling.
Add in cornstarch mixture.
Stir until thick.
Put the sauce in the pan with the stuffed peppers.
Bake at 375Β° for 30 minutes.
