Polish Cabbage Soup
Polish Cabbage Soup is an moderately easy dinner. Made with 1 small head cabbage, cored and shredded, 1 (28 oz.) can tomatoes, undrained, 2 c. tomato purée, 1 qt. water and 1 tbsp. butter, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine cabbage, tomatoes, purée, water, butter, juice, sugar and salt kettle.
Cover and simmer for 45 minutes. Beat cream in a small bowl. Gradually add 1 cup egg mixture. Stir contents of bowl gradually into soup kettle.
Remove from heat and stir constantly to prevent eggs from curdling.
Makes 10 to 12 servings.
