Pineapple-Zucchini Bread
Pineapple-Zucchini Bread is an impressive dinner. Made with 3 eggs, 1 c. oil, 2 c. sugar, 2 tsp. vanilla and 2 c. shredded zucchini, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

In a mixing bowl beat eggs, oil, sugar and vanilla until thick. Stir in zucchini, pineapple, flour, soda, salt, baking powder, cinnamon, nutmeg, currants and walnuts.
Blend well.
Pour into two greased 5 x 9-inch loaf pans.
Bake in a 350Β° oven one hour or until cake tester inserted in center comes out clean.
Makes two loaves.
