Pineapple-Pear Preserves
Pineapple-Pear Preserves is an easy dinner. Made with 2 gal. pears (after cleaning, peeling and slicing), 1 (20 oz.) can crushed pineapple, 4 large lemons, washed, sugar and fruit fresh, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Keep pears in water with Fruit Fresh while preparing them. Rinse and drain.
Put in a large enameled pan or pot; add more Fruit Fresh and sugar to coat all slices thickly.
Slice all lemons very thin; seed, then add to pears.
Add crushed pineapple. Soak this mixture overnight.
Next morning, cook over medium heat until pears are beginning to "clear" at thick part and are barely fork-tender.
While cooking, may sprinkle with cinnamon if desired, to taste.
Cook about 1 1/2 to 2 hours.
Jar in hot jars and with hot seals.
Should yield 8 to 10 pints.
