Pineapple Cake
Pineapple Cake is an moderately easy dinner. Made with 1 c. butter or other shortening, 2 c. sugar, 4 eggs, separated, 3 c. sifted cake flour (i use self-rising) and 1/4 tsp. salt (omit if using self-rising), this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cream shortening and sugar until fluffy.
Beat egg whites until stiff, but not dry.
Add egg yolks 1 at a time to shortening and sugar, beating thoroughly after each one added.
Sift dry ingredients together and add alternately with milk and vanilla to creamed mixture, beating until smooth after each addition.
Fold in stiffly beaten egg whites.
Pour into pans (greased) and bake at 350Β° for 25 minutes or until toothpick inserted comes out clean.
