Piña Colada Jello Salad
Piña Colada Jello Salad is an moderately easy dinner. Made with 1 can (8 ounces) crushed pineapple in own juice, 1 package (6 ounces) lime gelatin, 1 1/2 cups boiling water, 3 tablespoons light rum and 1 1/2 teaspoons coconut flavoring, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Drain pineapple, reserving juice.
Dissolve gelatin in boiling water.
Add cold water to reserved juice to measure 1 1/2 cups; add to dissolved gelatin.
Stir in rum and coconut flavoring.
Remove 1 1/2 cups of mixture; chill until slightly thickened (about 1 hour). Also chill remaining gelatin until slightly thickened (about 45 minutes); fold in pineapple.
Pour into oiled 1-quart mold.
Chill 5 minutes.
Whip cream, gradually adding sugar, until soft peaks form.
Thoroughly fold into the 1 1/2 cups slightly thickened gelatin.
Pour over pineapple layer.
Chill until firm.
Unmold onto serving dish.
Makes 6-8 servings (very generous servings).
