Piña Colada Cake
Piña Colada Cake is an moderately easy dinner. Made with 1/2 c. cooking oil, 1 pkg. yellow cake mix, 2 eggs, 1 c. coconut and 1 small can crushed pineapple with juice, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Pour 1/2 cup cooking oil in bottom of rectangular cake pan. Dump 1 package yellow cake mix over top of oil and add eggs, coconut and pineapple with juice and water.
Stir until ingredients are mixed well.
Bake at 350° for 35 to 40 minutes (test with toothpick for doneness).
Remove from oven and poke holes in cake with handle of wooden spoon.
Make package of instant pudding as directed on package.
When slightly set, pour over cake so that pudding goes in holes. The rest over the cake.
Before serving, top with Cool Whip and generously sprinkle with coconut.
