Pickled Squash
Pickled Squash is an moderately easy dinner. Made with 4 qt. squash, cut thin, 6 onions, sliced thin, 1 1/2 tsp. mustard seed, 5 c. sugar and 1/2 tsp. celery seed, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Mix squash and onions.
Sprinkle with salt; cover with ice. Let stand for 3 hours.
Drain.
Mix sugar, vinegar, mustard, celery seed and turmeric; heat well.
Add squash and onions; bring to a boil.
Cook for about 5 minutes, stirring thoroughly once. Put into hot jars and seal.
