Peruvian Lomo Saltado
Peruvian Lomo Saltado is an moderately easy dinner. Made with 2 tbsp. vegetable oil, 1/2 c. onion, sliced, 2 cloves of garlic, minced, 1/2 c. bell pepper (yellow or red) chopped and 1 1/2 c. potato, cubed and cooked, this recipe delivers authentic, satisfying flavors. Heat oil in a non-stick pan and saute onion, garlic and bell pepper.
Cook potato, stirring occasionally, until potato just begins to brown.
Add chili and steak.
Saute a few more minutes, stir in tomato, oregano, salt and pepper.
Serve with steamed rice.
