Peppermint Pinwheels
Peppermint Pinwheels is an moderately easy dinner. Made with 1 c. or 2 sticks soft butter, 1 c. packed brown sugar, 1/2 tsp. baking soda, 1 tsp. vanilla extract and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In a large mixing bowl, combine all ingredients except food coloring.
Divide the dough evenly into halves; add food coloring to one half of dough, refrigerate for one hour.
Take the plain dough and roll on a lightly floured surface into a 16 by 9 inch rectangle. Do the same with the color dough; then lay it over the plain dough.
Roll them and wrap tightly in wax paper. Refrigerate at least 4 hours.
When finished heat oven to 400Β°; slice about 1/4 inch thick and place on ungreased cookie sheet. Bake 8 to 10 minutes or until golden brown.
