Peanut Brittle
Peanut Brittle is an moderately easy dinner. Made with 1/2 c. water, 2 c. sugar, 1 c. white karo syrup, 2 c. raw peanuts (1 lb.) and 2 tbsp. butter, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Bring water to a boil.
Add sugar and Karo syrup.
Stir until dissolved.
Cook to 240° on candy thermometer.
Add raw peanuts. Cook to 310°, stirring constantly.
Remove from stove and add butter and vanilla, then soda.
Stir quickly.
Mixture will foam. Spread on well buttered or foil-lined cookie sheet (10 x 14-inches); cool.
Remove foil.
Break into pieces.
