Peach Cobbler
Peach Cobbler is an moderately easy dinner. Made with 1 c. buttermilk baking mix, 4 tbsp. brown sugar, 1/3 c. milk, 1 (29 oz.) can sliced peaches (undrained) and 3 tbsp. cornstarch, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix baking mix, 1 tablespoon brown sugar and milk.
Set aside. In a 10-inch skillet, combine remaining brown sugar, peaches, cornstarch, butter, ginger and salt.
Cook over low heat, stirring constantly, until thick and bubbly.
Drop batter mixture by tablespoonfuls into hot peach mixture.
Cook, uncovered, over low heat 10 minutes; cover and cook an additional 10 to 15 minutes until dumplings are fluffy.
To serve, spoon syrup over dumplings and top with whipped cream.
Serves six to eight.
