Pea Soup
Pea Soup is an moderately easy dinner. Made with 2 pkg. dried peas (yellow or green), ham hocks or smoked pieces, 1 medium or small carrot, diced, 1 small onion, peeled and finely chopped and 1 garlic clove, peeled, mashed and minced, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Rinse peas; remove off color or impurities.
Cover with cold water; soak at least 12 hours.
Drain the soaked peas; cover with fresh water and bring to a boil.
Lower heat; simmer for several hours.
Remove any scum or froth from the top.
Add ham hocks, chicken bouillon, minced onion and diced carrots.
Continue to cook until peas begin to soften to a mush.
Stir frequently.
