About 45 minutes before serving, peel and cut sweet potatoes into 3/4-inch thick slices. Dice onion.
In a 12-inch skillet over medium heat in 1 tablespoon hot salad oil, cook onion until tender; remove to large bowl. In the same skillet over medium heat, in 3 tablespoons hot salad oil, cook sweet potatoes until golden brown on one side.
Reduce heat to low.
Cover and cook 5 minutes. With pancake turner, turn potatoes.
Cook over medium heat until browned on the other side. Reduce heat to low. Cover and cook 5 to 10 minutes longer until potatoes are tender.
Remove sweet potatoes to bowl with onion.
