Paella
Paella is an impressive dinner. Made with 1 c. rice, 1 (3 lb.) chicken, 1 qt. water, 4 1/2 tsp. salt and 1/4 tsp. pepper, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cook chicken in water until tender with 2 teaspoons salt, the pepper, onion, parsley and celery.
Remove from broth; take chicken off bones in large pieces.
Strain broth and save.
Cook rice and garlic in olive oil until straw-colored.
Add 1 1/2 cups broth, saffron, peas, shrimp and 2 1/2 teaspoons salt together.
Bring to a boil.
Pour into 2-quart casserole dish; add sausages.
Bake for 1 hour in moderate oven.
Add clams or mussels and bake until clams open.
