Oven-Fried Eggplant
Oven-Fried Eggplant is an moderately easy dinner. Made with 1/2 c. nonfat mayonnaise, 1 tbsp. minced onion, 12 (1/2-inch) slices unpeeled eggplant (about 1 lb.), 1/3 c. fine dry bread crumbs and 1/3 c. grated parmesan cheese, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Combine first 2 ingredients. Stir well. Spread evenly over both sides of eggplant slices.
Combine bread crumbs, cheese and Italian seasoning in a shallow bowl. Dredge eggplant in bread crumb mixture.
Place eggplant on a baking sheet sprayed with vegetable cooking spray.
Bake at 425Β° for 12 minutes. Turn eggplant over and bake 12 minutes or until golden. Serves 4.
