Orelletes are Catalan fried pastries stretched into thin ear-like rounds, scented with anise, lemon, and sweet wine. They fry crisp and blistered, then take a shower of sugar for carnival or village celebrations.

Mix flour with eggs, olive oil, anise liqueur, sweet wine, lemon zest, anise seed, and sugar into a smooth dough.
Rest the dough until relaxed, then divide it into small balls.

Fry the orelletes in hot oil until blistered and golden, then drain and dust generously with sugar.
