Orange Cranberry Bread
Orange Cranberry Bread is an moderately easy dinner. Made with 1 1/2 c. cranberries, 1 c. pecans, 1 c. granulated sugar, 1/4 c. (1/2 stick) butter and 1 tbsp. grated orange rind, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Chop cranberries until coarse.
Chop pecans coarsely; reserve. In a bowl, cream sugar, butter and orange rind until smooth.
In another bowl, combine the flour, baking powder, salt and baking soda.
Mix the orange juice and egg together until well blended. Stir the flour mixture into the sugar mixture until blended.
Add the orange juice and egg.
Stir until blended but do not overmix. It will be rather stiff.
Add the cranberries and pecans.
Turn into a lightly greased 9 x 5 x 3-inch loaf pan.
Bake at 350Β° for 1 hour or until toothpick inserted in center comes out clean.
Cool bread in pan 15 minutes.
Remove from pan.
Cool on wire rack.
