Old Timey Chicken Stew
Old Timey Chicken Stew is an moderately easy dinner. Made with 1 (3 to 4 lb.) hen, 6 tbsp. flour (all-purpose), 2 onions, chopped, 5 c. hot water and 1/2 c. green onions and tops, chopped, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Brown cut-up hen in oil.
When cooked, remove from pot.
Add flour and brown slowly to make a roux.
Add peppers, celery and onions and cook until soft.
Add hen and water.
Cook three hours. Add onion tops and parsley and cook five minutes.
Remove hen. Dumplings can now be added (see Dumplings recipe).
