Okra Lover's Omelet
Okra Lover'S Omelet is an easy dinner. Made with 1 c. fresh okra, cut in 1/4 inch rounds, 1/2 c. chopped scallions, tops included, 6 eggs, beaten and 1/3 c. milk, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Fry okra and onions (scallions) in 2 tablespoons bacon grease until onions are clear and okra is still bright green (overcook and it will be slimy).
Remove okra and onions.
In same skillet stir eggs until they start thickening, then return okra and onions and carefully work mixture to desired doneness (about 5 to 9 minutes). Serves 4 to 5. Very good served with cornbread.
