Oat Bran Muffins
Oat Bran Muffins is an moderately easy dinner. Made with 2 1/4 c. oat bran, 1/4 c. raisins, dates, etc., 1/4 c. brown sugar, honey or molasses, 2 egg whites or substitute for 2 eggs and 1/4 c. chopped nuts (optional), this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Combine the oat bran, nuts, raisins and baking powder; stir in brown sugar.
Mix the milk, egg whites and oil together and blend the oat bran mixture. Bake at 425Β° for 15 to 17 minutes.
Should be moist but not wet.
Makes 12 muffins. Store in plastic to retain moisture.
Keep in the refrigerator.
