New Mexico Peanut Pie is an moderately easy dinner. Made with 1/2 c. sugar, 1/4 c. firmly packed brown sugar, 1/4 c. flour, 2 tbsp. cornstarch and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Combine sugar, brown sugar, flour, cornstarch and salt in saucepan.
Peanut butter chips gradually. Cook and stir on medium heat until thick and bubbly.
Reduce heat; cook
2 minutes.
Beat egg lightly in small bowl.
1 cup hot mixture into yolks gradually and return egg mixture to saucepan. Bring to gentle boil. Cook stir on low heat 2 minutes.
Remove from heat and stir in butter and vanilla.
Pour mixture into baked pie shell and sprinkle with peanuts.
Bake at 350Β° for 12 minutes.
Cool to room temperature before serving.
