New England Clam Chowder
New England Clam Chowder is an moderately easy dinner. Made with 4 tbsp. finely cut salt pork or bacon, 2 c. diced potatoes, 4 tbsp. minced onions, 2 cans (7 oz.) minced clams, drained (reserve juice) and 1/2 c. boiling water, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Place finely chopped salt pork into a large saucepan and cook slowly until fat begins to fry out.
Add minced onions and saute until yellow.
Add juice from clams, diced potatoes and boiling water.
Cook about 10 minutes, until potatoes are tender.
Add milk, clams, salt and pepper.
Bring to a boiling point (do not boil), stirring occasionally.
Yields 6 servings.
