My Great Grandmother's Beet Jam
My Great Grandmother'S Beet Jam is an easy dinner. Made with 4 lb. fresh beets, 2 1/2 c. sugar, 2 oz. ginger root, 3 lemons, juice and grated rind and 1/2 lb. almonds or walnuts, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Wash and peel beets.
Put through meat grinder or grate them. (I use my food processor.)
Barely cover with water and cook slowly until tender.
Add sugar, ginger and lemon juice and rind. Cook until thick and clear, at least 1 hour.
Add chopped nuts. Makes about 2 quarts.
