Mushroom Wild Rice
Mushroom Wild Rice is an impressive dinner. Made with 4 c water, 1 c uncooked wild rice, 1 t butter or margarine, 1-1/2 t salt, divided and 1/2 c uncooked brown rice, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
In a large saucepan, bring water, wild rice, butter and 1/2 t salt to a boil.
Reduce heat; cover and simmer 40 minutes.
Stir in brown rice and cover and simmer 25-30 minutes longer until rice is tender.
While rice is cooking, brown bacon in a large skillet until crisp. Remove bacon and drain, leaving 2 T of the bacon drippings in the pan.
Saute the mushrooms, onions, peppers and celery in the drippings until they are tender. Stir in broth and remaining salt and bring mixture to a boil.
Combine the cornstarch and cold water until smooth and stir into the mushroom mixture.
Cook 2 minutes until thickened then stir in almonds and bacon pieces.
Drain the rice and add mushroom mixture.
