Mushroom Soup
Mushroom Soup is an moderately easy dinner. Made with 3 oz. dried mushrooms, 1 qt. beef broth, 2 tbsp. butter, 3 tbsp. flour and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Soak mushrooms for 3 to 4 hours and bring to a boil in a small amount of water.
Add the broth and simmer, covered, for half an hour.
Melt the butter; blend in the flour, salt and pepper.
Add the stock gradually while stirring.
Stir in sour cream just before serving.
Reheat, but don't let the soup boil.
Add more seasoning to taste.
