Mushroom Frittata
Mushroom Frittata is an impressive dinner. Made with 1 c. sliced fresh mushrooms, 2/3 c. chopped onions, 2/3 c. chopped green pepper, 1 c. chopped fresh zucchini and 1 minced garlic, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Saute mushrooms, onions, green pepper, zucchini and garlic in oil until crisp-tender.
Beat eggs with cream, salt and pepper; add mushroom mixture, bread cubes, cream cheese and Cheddar.
Stir thoroughly, but lightly, so cream cheese cubes are intact.
Pour into well-greased 9-inch pie plate.
Bake at 350Β° for 45 minutes or until set in center and brown.
Cool 5 to 10 minutes.
