Mom's Scotch Shortbread
Mom'S Scotch Shortbread is an easy dinner. Made with 1 c. butter, 3/4 c. confectioners sugar, sifted, 1 1/2 c. all-purpose flour, sifted and 1/2 c. cornstarch, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cream butter until fluffy.
Add sugar; cream well.
Put the flour and cornstarch together, then sift again 2 times to be sure the two are well mixed.
Add a bit at a time to butter and sugar, mixing well.
(May have to knead with hands.)
On a dough board, pat the dough to a square about 1/2-inch thick.
Cut into strips, 2 inches wide and length.
In a 300Β° oven, transfer strips to cookie sheet; bake 30 to 35 minutes.
Fingers will harden as they cool.
Do not store near heat.
