Mom's Red Rice
Mom'S Red Rice is an moderately easy dinner. Made with 5 slices bacon, chopped, 1 onion, chopped, 1 (16 oz.) can tomatoes, long grain white rice and salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cook bacon in a medium size heavy saucepan until done.
Saute onion until soft.
Add canned tomatoes.
Use the can to measure 2/3 can (to the top set of inside ridges) of rice and 1/3 can water.
Add to mixture and bring to a boil.
Lower heat immediately.
Add a generous amount of salt and pepper and a half teaspoon of sugar.
Stir and cover.
Cook over low heat for approximately 1 hour, stirring with a fork every 10 minutes.
Rice should be firm and dry and not "crunchy."
