Mom's Mincemeat Pie
Mom'S Mincemeat Pie is an moderately easy dinner. Made with 2 1/2 c. beef roast, cooked and ground up, 3/4 lb. raisins, 6 to 7 apples, peeled, cored and ground coarsely, 3/4 c. brown sugar and 3/4 c. white sugar, this recipe delivers authentic, satisfying flavors. Cook beef roast in salted water for about 3 hours.
Cool. Grind roast in meat grinder or food processor and measure 2 1/2 cups.
Grind peeled and cored apples.
Add to meat and raisins. Add cinnamon and salt; mix together.
If mixture is too thick when mixed, add a little water or apple juice.
Fill prepared pie shell with mixture; add vented top crust.
Bake for 15 minutes at 375°; reduce heat to 350° and bake for 45 minutes longer.
