Mom's Lemon Meringue Pie
Mom'S Lemon Meringue Pie is an moderately easy dinner. Made with 7 tbsp. cornstarch, 1 1/2 c. sugar, 1/3 tsp. salt, 2 c. boiling water and 1/3 c. lemon juice, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Combine cornstarch, sugar and salt.
Add water and cook until thick, stirring constantly.
Cook and place over low heat for about 10 minutes, stirring occasionally.
Beat egg yolks slightly and add a little hot mixture. Stir and pour back.
Cook 2 minutes, stirring constantly.
Remove from heat and stir in lemon juice, oleo and grated peel.
Cool to room temperature without stirring. Pour into baked shell and top with meringue.
