Modern Grated Sweet Potato Pudding
Modern Grated Sweet Potato Pudding is an moderately easy dinner. Made with 2 eggs, 1 1/2 c. milk, 3 medium sweet potatoes (uncooked), 1 stick margarine, divided and 1 c. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
(Be sure to place ingredients in blender container in order listed.)
Place eggs and milk in blender.
Peel potatoes and cut into small pieces.
Add to eggs and milk, along with sugar, salt and 1/2 stick of margarine.
Blend about 15 to 20 seconds or until potatoes have blended well.
The other 1/2 stick of margarine should be melting in a casserole dish.
Pour potato mixture into buttered casserole.
Bake in slow oven at 325Β° for 45 minutes to 1 hour, stirring occasionally, until golden brown.
Serve warm as a side dish or as a dessert with light or whipped cream.
